Is anyone able to tell me please how many channels I would need to do something like the show in the attached YouTube clip? What controller might be best for it?

Hoping the creator is on the forum and possibly has the sequence available to purchase?

That would be quite a lot to take on in your first year, but certainly doable.
I use a Falcon F16v3 + expansion board. However the F16v4 is now out.
I would recommend joining one of the xLights groups on facebook where you will find a lot of great information.
